This classic red is a superior blend of 62% Cabernet Sauvignon and 33% Merlot and 5% Cabernet Franc. The grapes were sourced exclusively from our Gimblett Gravel vineyards in Hawkes Bay. After an exceptional growing season where conditions were ideal, we harvested fruit of unsurpassed quality - the Merlot on 12 April and the Cabernet Sauvignon on 27 April, at an average of 23.2 brix.
Each parcel was cold soaked for 2-3 days, followed by inoculated fermentation in stainless steel tanks with twice daily pump-overs. Post-ferment, the parcels were allowed to macerate on skins for an average of 21 days, when the winemaker deemed the tannins were ideal, the wines were pressed off skins. Still as individual parcels, the wines were transferred to barrel and aged for twelve months in quality oak barrels (82% French, 14% American and 4% Hungarian) of which 27% was new oak.
Blending took place 6 May 2014 after fastidious barrel selection, followed by a light egg-white fining, before bottling in early July 2014 under screwcap.
This rich and luscious wine exudes intense blackcurrant and brambly blackberry flavours, with spicy, aniseed notes. Twelve months ageing in quality seasoned oak confers a silky smooth texture, giving immediate appeal, or for judicious cellaring to reward over the medium term.
