The grapes for this beautifully crafted blend of Merlot and Cabernet Sauvignon were selected from our superior Gimblett Gravels vineyard ideally suited to Bordeaux-red varietals.
The 2019 growing season experienced a very hot summer and moderately cool nights, providing the perfect growing season. These conditions proved perfect for ripening and without the pressure of rainfall, harvesting was able to done when the fruit was in its premium condition. The Merlot was harvested on 11th April, with the Cabernet 9 days later on the 20th April.
Each parcel was individually fermented in stainless steel tanks for enhanced colour and flavour extraction, then sent to barrel for added complexity of predominantly French oak seasoning, for one month before blending. The new blend was then returned to barrel with 25% new French oak in the ideal proportions to compose the final wine - 72% Merlot, 28% Cabernet Sauvignon.
Bottling took place on the 13th of June 2019, under screwcap closure.
This fine Merlot Cabernet blend has lovely blackcurrant and boysenberry aromas and flavours underlined with toasty oak. Complemented with subtle liquorice, leather and velvety tannins, this full bodied wine has a long lingering finish. Matured in quality French oak for twelve months, it is approachable and will pair perfectly with your favourite red meat or pasta dish.
