Gimblett Gravels, Hawkes Bay2017
The grapes for this generous wine were grown in the stony soils in the prestigious Gimblett Gravels Wine Growing District, on low yielding closely-spaced vines.
The single vineyard fruit was picked in early April, consistent for this variety. We harvested the fruit in good condition on 3rd April at 21.1o Brix. The grapes were gently crushed, allowing some whole berries to remain intact, and the must transferred into open top fermenters for 2 days cold soak.
Fermentation proceeded with twice daily plunging for colour, flavour and fine tannin extraction. The resulting wine was racked once and aged for 11 months in a mix of quality French and American 300L hogsheads (33% being new wood). The wine was fined and filtered prior to bottling in June 2018 under screwcap closure.
This delicious Merlot from premium grapes exudes ripe plum and boysenberry fruits with earthy spicy notes, interwoven on a lovely velvety texture. Already appetising it is ready for immediate enjoyment, or will reward judicious cellaring.
