This fine wine is an appealing blend of the classic Bordeaux varieties, Merlot (51%), Malbec (44%) and a smattering of Cabernet Franc (5%). The grapes were grown in the highly acclaimed Gimblett Gravels Wine Growing District and harvested in optimum condition during early April at 21.8 Brix average.
Upon arrival to the winery, the grapes were gently crushed, cold soaked for three days and fermented in both closed and open top stainless steel tanks, with twice-daily cap management to extract colour, flavour and fine tannin structure. A post-ferment maceration followed over sixteen days. The skins were then pressed off and the wine aged for twelve months in quality oak barrels (78% French, 16% American, 6%Hungarian). The wine was racked once during aging and the blend composed on 29 May2017, followed by a light egg-white fining before bottling on the 4 July 2017,under screwcap.
Immediately warm and appetising, this deliciously harmonious blend of classical Bordeaux varieties showcases blackberry fruit complemented with spicy leather, earthy musky violets, and liquorice hints.
