Gimblett Gravels, Hawkes Bay2016
TROPHY - Champion Cabernet Sauvignon & Blends
TOP WINE 2018 / Best Reds
The grapes for this generous wine were grown in the stony soils in the prestigious Gimblett Gravels Wine Growing District, on low yielding closely-spaced vines. The2016 growing season experienced a very warm summer and early autumn, which led to a record Grower Degree Days for that period, with welcome intermittent rain. Despite predictions for a later harvest, these conditions proved perfect for ripening. We harvested the fruit in good condition between 7th and22nd April 2016 at 22o Brix.
The grapes were gently crushed, allowing some whole berries to remain intact, and the must transferred into closed stainless steel tanks for an average of three days cold soak. Fermentation proceeded with twice daily rummaging for colour, flavour and fine tannin extraction. The resulting wine was aged for 12 months in a mix of quality French and American300L hogsheads (36% being new wood), with one racking. The wine was fined and filtered prior to bottling in July 2017 under screwcap closure.
A rich and brooding wine, this traditional blend exudes intense blackcurrant and brambly blackberry flavours, with cigar box and toasty vanillin oak notes. Ageing in quality oak has conferred a silky smooth texture, giving this wine immediate appeal, or for judicious cellaring to reward over the medium term.
