Tasting Note

The name "Elspeth One� signifies the triumphant union of four classic varieties into one truly outstanding experience, encapsulating the very essence of Gimblett Gravels winegrowing with innovative winemaking. The grapes were handpicked to ensure optimal fruit selection and gentle handling, between 9th and 26th April, at an average 24.4� Brix.

They were then destemmed and cold macerated for 3-6 days prior to ferment. Each parcel was separately vinified - Syrah and Cabernet Sauvignon with indigenous yeast in Integrale barrels; Merlot and Malbec with inoculated yeast in open top fermenters. All parcels received an average 14 days post-ferment maceration to enhance tannin structure, then pressed to quality French oak barriques for 15-18 months aging, with 3 aerating rackings throughout. The final blend (50% Syrah, 25% Malbec, 13% Merlot, 12% Cabernet Sauvignon) was composed after a rigourous barrel selection process, and bottled under cork on the 2nd of November 2007.

This distinguished and finely balanced blend is powerful yet refined, rich and opulent with a gala performance of intense blackberry, blackcurrant, black pepper, liquorice, mocha and spice flavours on a backbone of ripe velvety tannins. The finish is satisfyingly full, with the staying power and length of an Olympic marathon performance! Immensely enjoyable now, it will continue to evolve and reward with cellaring.
