This fine wine is an appealing blend of the classic Bordeaux varieties, Merlot (55%), Malbec (45%). Grapes were grown in the highly acclaimed Gimblett Gravels wine growing region, and were harvested in optimum condition in mid-April at 21.3 Brix average.
The grapes were gently crushed, cold soaked for three days and fermented in both closed and open top stainless steel tanks, with twice-daily cap management to extract colour, flavour and fine tannin structure. A postferment maceration followed over twelve days. The skins were then pressed off and the wine aged for thirteen months in quality oak barrels (70% French and 30% American). The wine was racked twice during aging and the blend was composed on 11 July 2016. The wine was lightly fined with egg-white before being bottled on 14 September 2016, under screwcap.
Immediately warm and appetising, this deliciously harmonious blend of two classical Bordeaux varieties showcases black berry fruit complemented with spicy leather, musky violets and liquorice hints. An excellent choice with lamb or pork dishes. Ready for immediate enjoyment or to reward cellaring.
