This classic red is a superior blend of 67% Cabernet Sauvignon and 33% Merlot. The grapes were sourced exclusively from our Mere Road vineyards, within the highly regarded Gimblett Gravels region of Hawkes Bay. Despite a challenging season, we were able to harvest the fruit in optimum condition - the Merlot on 11th April and the Cabernet Sauvignon on 26th April, at an average of 22.4 brix.
Each parcel was cold soaked for one day, followed by inoculated fermentation in stainless steel tanks with twice daily pump-overs. Post-ferment, the parcels were allowed to macerate on skins for an average of six days, when the winemaker deemed the tannins were ideal, the wines were pressed off skins. Still as individual parcels, the wines were transferred to barrel and aged for twelve months in quality oak barrels (83% French, 17% American) of which 24% was new oak. Blending took place 1st June 2013 after fastidious barrel selection, followed by a light egg-white fining, before bottling in early July 2013 under screwcap.
This rich and luscious wine exudes intense blackcurrant and brambly blackberry flavours, with spicy, aniseed notes. Twelve months ageing in quality seasoned oak confers a silky smooth texture, giving immediate appeal, or for judicious cellaring to reward over the medium term.
