The grapes for this distinguished wine were grown exclusively in our highly regarded Mere Road (91%) and Trust Block (9%) Vineyards in the renowned Gimblett Gravels of Hawkes Bay. Hand-picked on 21st April at 22� Brix.
The grapes were destemmed, retaining whole berries, which were cold soaked for 2 days prior to fermentation. The two batches proceeded through ferment, with approximately one third undergoing natural ferment in 100% French integrale barrels, rotated twice daily. Post fermentation, the wines were allowed an 26 days alcohol soak before being pressed off skins and transferred to barrel for 15 months aging in quality French hogsheads (53% new). This superior wine received a light egg white fining and pad filtration before bottling on 11th October 2011 under Stelvin screwcap.
Bestowed with 'Classic NZ Wine' status, this distinguished wine exudes blackcurrant and black pepper flavours, complemented with fine oak seasoning, dark chocolate, and licorice notes. Beautifully poised, it is supple, rich and complex.
