Gimblett Gravels, Hawkes Bay2011
This distinguished Cabernet Sauvignon was made from ultra-premium grapes grown on sixteen year old vines in our Mere Road Vineyard, located in the prestigious stony soils of the Gimblett Gravels of Hawke�s Bay. The grapes were handpicked at ideal physiological ripeness and balance on 25th April at 22 Brix.
The fruit was destemmed, retaining whole berries which were cold-soaked for four days then inoculated with a selected yeast. The cap was plunged twice daily throughout ferment, until dry. The wine was macerated on its skins for a further 27 days, then pressed to barrel and aged for 13 months in quality 100% new French oak, with two aerated rackings throughout. The wine was egg white fined, followed by a light pad filtered prior to bottling under screwcap on 30th October 2012.
This fine Cabernet Sauvignon is rich yet elegantly styled, showcasing vibrant blackcurrant and blackberry fruit, married with spicy, toasty oak and hints of aniseed and dark cocoa. It has a smooth velvety texture that carries the fruit to a persistent dry finish. A beautifully poised wine for immediate enjoyment or to reward cellaring.
