The fruit for this superior Chardonnay was sourced from our ultra-premium vineyard sites at Mere Road Vineyard (63%) and Te Awanga (37%). Both parcels of grapes were handpicked at optimal ripeness on the 4th of April.
At the winery they were whole-bunch pressed and placed into barrel for alcoholic fermentation. 37% of the blend underwent a natural ferment, with the balance inoculated with a specially selected yeast. Thereafter approximately 40% was treated to malolactic fermentation to engender enhanced and softened texture. The malo and non-malo portions were then put together and barrel-aged (100% French, 23% new, 45% 1 year old) for 11 months sur lie, with frequent stirring for enhanced complexity. The vineyard parcels were then blended in ideal ratios on February 29th 2012, and the final wine bottled under screwcap on 20th of April 2012.
This exceptional full bodied Chardonnay features harmonious spicy notes that perfectly complement its rich creamy palate crammed with deliciously intense apricot and nectarine flavours. Absolutely stunning, it will continue to flourish and evolve with judicious cellaring.
