Tasting Note

This dark, distinguished single vineyard Cabernet Sauvignon was made from grapes exclusively grown on low-yielding vines in our Mills Reef Trust Vineyard, located on the corner of Mere Road and SH50 in the prestigious Gimblett Gravels of Hawke�s Bay.

The grapes were handpicked at ideal physiological ripeness on May 2nd, destemmed, retaining whole berries and cold-soaked for two days. Fermentation ensued in open top fermenters (plunged twice daily) initiated with a selected yeast, followed by a post-ferment maceration for 14 days. The wine was pressed off skins and transferred to barrel for 15 months aging in 78% French, 22% American oak, of which 43% was new wood. The wine finally received a light egg-white fining and pad filtration prior to bottling under screwcap on 28th September 2011.

This impressive Cabernet Sauvignon from our Trust vineyard never fails to excite and surprise. This year, the wine shows delightful rose petal fragrance and distinct blackcurrant aromas, with rich complex layers of sweet berry fruit, caramel and chocolate. The beautifully integrated oak weds to the smooth tannin structure to put the finishing touches to this elegantly styled and delicious wine. Enjoyable immediately, it will cellar magnificently.
