The earlier ripening Merlot was harvested between 3-5 April, whilst the later ripening Cabernet Sauvignon was harvested on 19th of April, at an average of 23.7 brix over all grape parcels. Each parcel was individually fermented in stainless steel tank, with pumping over twice daily for enhanced colour and flavour. Then aged in barrel for 13 months (87% French, 13% American, 43% new and 1 year old). Bottled on 28th August 2009 under screwcap closure. This classic deep ruby Merlot dominant red exudes plum, blackcurrant and lightly roasted coffee aromas. A harmonious and silky smooth palate reveals blackberry and plum flavours complemented by seductive mocha, evolving to savoury leather and olive notes, finishing soft and spicy. Ready to enjoy now, it will also cellar gracefully for the medium term.
